This chocolate begins its journey at the Bejofo orchard in the Sambirano Valley of Madagascar, as an heirloom Criollo Varietal cacao. This cacao is a classic example of Bertil Akkeson's long efforts to manage and cultivate his family owned cacao orchards across Madagascar.

Once harvested, the cacao is fermented in cedar boxes and sun-dried to unlock its tart tropical notes.
